The key to brewing a fantastic beer is to have a brewmaster with intricate knowledge of the ingredients and brewing process. Our brewmaster, Steve Courier, has won several awards in connection with his work at SLO Brew and is nationally recognized for his brewing skills.
The Brewing Process

1. The process itself begins in the Mashing Tun, which is the large tank pictured on the right. Cracked barley is put in here and soaked with hot water (this is called the mashing process). This converts the starches in the barley grain into fermentable sugars. Dark roasted barley is used at this stage to produce the richer flavors in our Amber and Ale Porter.

2. The sweet extract of barley and water is then pumped into the boiling kettle. This is where those secret ingredients called "hops" (resinous, fragrant flower petals) are cooked into the broth creating what is now called "wort" (pronounced "wert"). Once the wort is finished boiling for an hours or so, it is transferred to the fermenting tanks.

3. Yeast is now added to wort in the fermenting tanks. These busy little organisms begin to rapidly digest the sugars in the wort, giving off alcohol as a by product. While they're at it, they also produce carbon dioxide which naturally carbonates our brew. In contrast, most commercial beers have to add carbon dioxide to their beer.

4. After 5 to 7 days of temperature controlled fermentation, the brew is filtered through diatomaceous earth (a natural filter) to remove the exhausted yeast cells and other yucky stuff that could cloud the beer.

5. After filtering, the finished beer is pumped into the refrigerated conditioning and serving tanks which can be seen behind the shelves that line the back of our bar. The beer taps pulled by the friendly staff at Downtown Brewing Co. are connected directly to these tanks. That's why our handcrafted Ales, Porters and Wheat Beer taste so fresh...they are! And because it goes direct from the brew house to you, there's no need for preservatives or additives.

6. The final product is a fresh handcrafted beer. Another happy customer gets a Downtown Brewing Co. brew fresh from the tap!
